How to judge a matcha before you taste it
Matcha is shade-grown Japanese green tea, stone-ground finely enough that you drink the whole leaf rather than steeping it and throwing it away. That is also why quality is so visible: nothing is filtered out. Four checks, in order:
- Colour. Fresh, well-made matcha is a vivid jade green. Culinary grade, old stock or oxidised powder drifts towards olive, khaki or brown — and the colour fades long before the tin admits it.
- Aroma. Good matcha smells of fresh-cut grass with a light sweetness. Tired matcha smells of hay and dust.
- Taste. Ceremonial grade is savoury-sweet with gentle astringency. If a latte needs two pumps of syrup to be drinkable, that is usually culinary-grade bitterness being buried, not a flavour choice.
- Foam. Well-ground matcha whisks into a fine, stable foam. Coarse powder will not hold one.
Ceremonial grade comes from the first spring harvest — the youngest, most shaded leaves, with the most theanine and the least bitterness — and is made to be whisked with water and drunk on its own. Culinary grade comes from later harvests, with a stronger, more astringent profile built to survive baking. Neither term is legally regulated, which is exactly why the cup matters more than the label: a tin can call itself ceremonial and still behave like culinary grade. Storage is the last tell — matcha oxidises quickly once opened, so a counter that takes it seriously keeps small airtight tins away from heat and light, and will show you the powder if you ask. Matcha or coffee — which one, when
A serving of matcha carries roughly 30 to 50 mg of caffeine, noticeably less than most coffee drinks, and it never arrives alone: because you drink the ground leaf, the caffeine comes with L-theanine — tea is one of the very few dietary sources of that amino acid. In a randomised crossover trial, L-theanine combined with caffeine improved accuracy on an attention-switching task and reduced self-reported tiredness compared with placebo (Owen et al., Nutritional Neuroscience, 2008, DOI: 10.1179/147683008X301513).
Worth being precise about what that does and does not show: the trial dosed L-theanine and caffeine directly rather than testing matcha, so the calm-focus effect is a plausible mechanism rather than a proven property of a whisked bowl. The practical version is simpler. Coffee gives a sharper, faster lift — pick it when you want to be switched on now. Matcha gives a slower curve, especially blended with fat and protein, which is why it suits a long morning or the hour after training.
